About the Cup
This bold blend delivers an exceptionally refined cup with outstanding flavor clarity and a long finish. It features a warm cinnamon-spiced aroma, complemented by sweet hints of cinnamon and coconut. The light body carries a tropical sweetness, finishing with lingering notes of coconut cream.
About the Co-Fermentation Process
The coffee cherries, rich in sugar, are first soaked for 4 hours to clean, hydrate, and remove the floaters. They then undergo a 12-hour co-fermentation with spice / fruit, coffee and mossto honey. After depulping, with 50% of the mucilage left intact, they co-ferment again for 12 hours with more spices / fruit and momossto honey. The coffee is then dried for 26 days on raised beds using the honey process, followed by a 10-day stabilization in grainpro bags before cupping and selection.
