The Story Behind Da Funk – A Tribute to Natural Process Coffees
For years, natural process coffees were considered the black sheep of the coffee world—bold, unpredictable, and wildly fermented. But with refined drying techniques, they’ve evolved into some of the most sought-after coffees in specialty coffee culture.
In our modern coffee blend lineup, we knew we had to showcase our favorite processing style: the natural process. To do this, we paired the OG of natural coffees—Ethiopia, the birthplace of coffee—with one of the best natural coffees of all time: the Tres Dragones Natural from Café La Granja, Colombia. This coffee is untamed, unapologetic, and bursting with intense flavor:

The Natural Process – Bold, Untamed Flavor
Natural process coffees are known for their wild fermentation, which gives them their unique, fruity, and complex profiles. This processing method involves drying the coffee cherries with the fruit still attached, which allows the beans to absorb the rich, juicy flavors of the surrounding fruit.
